Not to forget the ''air-batu'', a surplus from the blended chillies as an old saying: it makes the sambal tumis an Umph!!
I'll make sure my sambal will go on the medium fire for @ least 1 hr with regular stirring from time to time until wangi & garing.....Achoo!!, excuse me....
