Kaplan's Madeleines
Got this recipe from the very best Nicole Kaplan's. It taste so much different as that thingy zest of lemon I've added in.
What You need:
7 tbsp unsalted butter (butter tanpa garam)
5 large eggs
1/2 cup + 3 tbsp sugar
1 1/4 cup unbleached all-purpose flour (spoon flour into dry measure cup and level off)
1 tsp baking powder
Large pinch of fine salt (secubit garam)
Grated zest of 1 lemon (parutan kulit lemon)
Madeleine mould, buttered & floured




How To:
1. In a small pan, melt the butter over medium heat & then continue to cook until it begins to smell nutty & turns brown. Remove from heat & strain through a sieve into a bowl.
2. In a heavy duty bowl fitted with a whisk, beat the eggs & sugar
until fluffy.

Sift the flour, baking powder & salt over the eggs & fold in with a rubber spatula.
Fold in the butter & lemon zest. Spoon batter in a pastry bag fitted with a 1/4 " plain tip. Refrigerate for at least 2 hours or best, overnight.
3. When you are ready to bake, set the racks to divide the oven into thirds and preheat to 190ºC.
4. Pipe the batter into the prepared moulds, filling them 3/4 full.

Bake until the madeleines form humps and are nut brown around the edges, about 12 mins.
5. Remove the pans from the oven and overturn the mould to bring out the madeleines. Wrap with napkin to keep warm. Repeat with the remaining batter.
6. Store madeleines in an airtight container.

cantiknyer...pernah rasa madeleines kat delifrance..cantik and wangi agaknyer u nyer version with the lemon zest..sedap tak yah cakap eh...tgk tu, mana lah kicii nak tau n faham2 bende2 baking gini..u takkan jumpa baking2 recipe kat kedai i..semua lauk2 biasa..sifu..teruskan perjuangan mu..terus kongsi ilmu eh..eh..yg apam kelapa atas tu..tiwul ayu kan?..ntah eh..part kueh2 ni i mmg weak abiss:/
wahhhhhhhh...*tabik spring cam NAH buat kat my blog*..i ada lah angan angan nak buat kuih ni..tapi tulah hanya angan2 semata2..hahahha. you beat me to this. cantik seh the end product :) by the way..i really like the apam hijau yang taruk kelapa kat atas..lembut cam kek..yumss!

Rosma, hang tabik spring? toink-yoink-yoink. Apa lagi rosma, cuba jgn tak cuba, rasanya boleh tahan lah. Tapi ada versi lain in which e butter need not melt. I think next time i need to reduce e butter slightly as it's quite oily.
