Chocolate de'Light Mini's
Despite of feeling so down due to having a sore throat and aching body, the spirit in baking & cooking is still there. Thank Allah for the zest & enthusiasm given to me. Still I want to share it here as long I have the chance, till.....time will tell......
Instead of using the normal baking pans, here I used a non-stick line mini round donut shape tin in a change for the second attempt, bought by my lurvy-durby hubby :p




What I Need:
2 cups (240gm) cake flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup (225gm) light brown sugar*
1 cup (225gm) granulated sugar*
1/2 cup water
3 oz unsweetened chocolate bar, chopped
1/2 cup (113gm) unsalted butter, room temp.
3 large eggs, separate the white & yolk please!
3/4 cup milk, room temp.
1 tsp vanilla essence
Some powder sugar for toppings
* hereby for both brown & granulated sugar I have reduced to 150gm respectively for not having too sweet on the cake.
How To:
1. Preheat oven at 180ºC, grease & flour baking pans.
2. Sift together cake flour, baking soda, baking powder & salt.
3. In medium saucepan, combine both sugars, corsely chopped chocolate & 1/2 cup water (you might not need all) and cook over moderately low heat (direct heat & not by double boiling, see pics) stirring until smooth. Let cool slightly, stirring occasionally.
4. Using an electric mixer, beat butter & egg yolks until blended. Gradually beat in the choc. mixture.
5. Beat in the dry ingedients (item no.2) in 2 batches, alternating with the milk, until smooth. Beat in vanilla (batter will be rather thin).
6. In a medium bowl, using clean beaters, beat the egg whites until barely firm (see pics above). Stir 1/3 of the whites into the batter. Fold in the remaining whites until incorporated.
7. Pour batter in baking pan.
8. Bake cakes in oven for 25-30mins, or until toothpick inserted in the center comes out clean.
9. Let the cake cool for 15 mins. in the oven, then remove out to cool completely.
10. Cut cake as desired and sprinkle with powdered sugar.
Tips: Cakes are better way to bake in the bottom 3rd of the oven as to get an even result.

I tried making the fluffy pancakes a few weeks ago. Very yummy. And had them with maple syrup. OMG... so sinful yet sedap. Tak cukup satu, I had four in one sitting. Hehe..
Takpe, makan dulu. Besok lusa boleh start jogging balik.. Haha
